Ingredients (Serves 2):

  • For the broth:

    • 2 cups chicken broth

    • 1 cup water

    • 2 tbsp red miso paste

    • 1 tbsp soy sauce

    • 1 tbsp sesame paste or tahini

    • 1 tbsp chili bean paste (doubanjiang) or Korean gochujang

    • 2 tsp minced garlic

    • 1 tsp grated ginger

    • 1 tbsp sesame oil

    • 1 tsp sugar

    For the chicken:

    • 200g boneless chicken thighs (or breast)

    • 1 tbsp soy sauce

    • 1 tsp sake (optional)

    • 1 tsp sesame oil

    • Pinch of pepper

    For toppings:

    • Soft-boiled egg

    • Bean sprouts

    • Corn kernels

    • Green onions, finely chopped

    • Chili oil drizzle

    • Nori (optional)

    For noodles:

    • 2 servings fresh ramen noodles


    🍳 How to Cook:

    1. Marinate the chicken:

      • Mix soy sauce, sake, sesame oil, and pepper in a bowl. Marinate chicken for 15–30 minutes.

    2. Cook the chicken:

      • Pan-sear or grill the marinated chicken until golden brown and cooked through. Slice thinly.

    3. Make the broth:

      • In a saucepan, heat sesame oil. Sauté garlic, ginger, and chili paste for 1 minute until fragrant.

      • Add chicken broth, water, miso, soy sauce, sesame paste, and sugar. Stir well and simmer for 10 minutes.

    4. Prepare noodles:

      • Cook ramen noodles according to package instructions. Drain well.

    5. Assemble:

      • Place noodles in bowls, pour hot spicy miso broth over them.

      • Top with sliced chicken, soft-boiled egg, bean sprouts, corn, and green onions.

      • Finish with a drizzle of chili oil for extra heat.
