Japanese Seafood Ramen Noodle – Easy Homemade Ramen with Shrimp, Squid & Scallops
🧂 Ingredients (Serves 2–3):
For the broth:

2 cups seafood stock (or fish broth)

1 cup chicken broth

1 tbsp soy sauce

1 tbsp mirin (sweet rice wine)

1 tbsp sake (optional)
-
1 tsp miso paste
-
1 tsp sesame oil
-
1 clove garlic, minced
-
1 small piece ginger, sliced
-
Salt to taste
For the seafood:

6–8 medium shrimp, peeled and deveined
-
100g squid rings
-
4–5 small scallops
-
1 tsp soy sauce
-
1 tsp sesame oil
For toppings:
-
Wakame seaweed (rehydrated)
-
Green onions, finely chopped
-
Corn kernels
-
Boiled egg, halved
-
Chili flakes (optional)
For noodles:

2 servings ramen noodles
🍳 How to Cook:

Prepare the seafood:

Toss shrimp, squid, and scallops with soy sauce and sesame oil.

Sauté them in a pan for 2–3 minutes until just cooked. Set aside.

Make the broth:

In a pot, heat sesame oil and sauté garlic and ginger until aromatic.

Add seafood stock, chicken broth, soy sauce, mirin, and miso paste.

Simmer for 10 minutes on low heat to develop flavor.

Cook the noodles:

Boil ramen noodles according to package instructions. Drain and set aside.

Assemble:

Place noodles in each bowl, pour hot broth over them.

Add sautéed shrimp, squid, and scallops.

Garnish with wakame, corn, green onions, and half a boiled egg.

Sprinkle chili flakes for a bit of spice (optional).
